I propose adding more ctm variation to thatch blocks without making it look drastically too different. Also as FD001 suggested, new block models with tiny bits of straws poking out might look quite cool.
Furnace block models are huge when held in hand, could that be fixed? I think that at least in blockbench you can adjust the model's size when held in hand.

I think Westeroscraft could implement some of the more realistic way of making trees, but not maybe as far as Conquest goes. Maybe some 45 degree branches so that angles could be represented a bit better, but I don't think we would need to go too detailed.

Thanks for pointing out the Hayford Road Dutch, I had completely forgotten about it. Also I've decided that I would go for a quite destructed type of area, maybe just a few spared houses like the Inn mentioned in Dunk and Egg canon, because ser Amory could have used that for his troops to stay...
