Redkeep appears in KL's official map. I wonder what makes the book's redkeep much more suitable in westeros than the series one. We can discuss that question.
Why we use the book's redkeep, not the one in series.

We use the book’s red keep because we explicitly are basing the entire project based on the books not the hbo series.
We can take aspects from the hbo series but the hbo red keep is pretty vague in layout, pretty ridiculous in some aspects (like the skyscraper tower connected by 20 stone bridges to Maegors), and has a tendency to change layout a lot.
The book red keep on the other hand has pages upon pages of lore which Iwan, WRMD and dozens of others took ages to comb through and make work, its part of the reason why im against a full Red Keep redo rather than a gradient update.

We go by the books as its the proper interpretation of those builds as written by George RR Martin. While the show often times has good sets, interiors, and sometimes exteriors, there are often times issues related to budgetary reasons where particular locations aren't always shown in their best interpretation. We do often try to implement neat elements from the series into builds but will always use book canon over anything else as its more the way these locations were supposed to have been represented.
