I have changed the design of the castle according to feedback off forums, and I have now built a 1:1 test of the upper section of the hillfort at my plot. The lower section will contain some houses and stables.
There are canonically, no rivers north of the Last River. Hence its name. You could have better representations of rainwater affecting the landscape, but no rivers. Maybe some small streams? that flow into the Last River could be good to maintain canon.

I imagine, given the description that Westwatch is ruined but still acts a natural chokepoint, maybe the Watch decided to knock down the northern gatehouse (leaving only some cobbles and bits of ruin on that side - to be used to block up the southern gate.

Maybe its worth having ruins of the castle on both sides? in lieu of GRRM being a bit forgetful. Unless we think that Dance takes precedent over Lands as that book is just an appendix - not a proper book within the series.
I was thinking there will be something that shows trade with the Neck dwellers like rare herbs/medicines, that will get traded up. Probably at that southern hamlet, and in the village market.
Important to remember that with the terraforming around Long Lake - the White Knife currently does not have rapids (canonically they should have) and the current form of the river in server is too level/low - the river and therefore the Lake itself will probs be 3-5 blocks higher if this ever...
Would've been covered in turf too, this type of structure is fairly old (there are prehistoric examples afaik).
Structures like bothies are a bit anachronistic tbf, but are what the shieling developed into much later on.
I think the shepherd huts would be really neat if they were bothies/shielings - impermanent shelters for them that are really cobbled together; super small as well.
