Do you already have a pre-planned list of castles you're going to look at? If not, maybe it would be worth talking with some of the mods to get some ideas as to which castles to review? There could be castles that exemplify specific common historical inaccuracies that you come across frequently...

Cabinets are renamed vanilla sponges, not a custom westerosblock, so I don't know if that's fixable? Might be though.

Without giving too much away, I want to use custom summon commands, even if I had the permissions it might cause quite a lot of server lag.

So the full size layout on my plot has been updated slightly; the main keep has been altered slightly and I have done a couple of tests for the new palette. I would go with the palette with the Oldtown bricks and the bedrock as it looks a bit more washed out and bleak, but would be happy to go...
