I like your new house test! The one thing I just want to make sure we don't run into issues with is the extent of your planning with fields and what not. The map you gave right now generally looks like a bunch of separate isolated areas without much thought about how they're gonna be connected...
ItsPabs: Are you planning to use any parts of the old town in your new version? E.g., individual houses/buildings or streets. I think you should consider salvaging some of the existing stuff when you replot the area.

I agree with Eld. I don't see a reason that you need to take on this bit of land, esp. since it wasn't part of your original plans. I think it would work nicely for either an immersion project or part of a redo/update of the Bridges lands.
I don't have much in the way of "guides", but here are some of the mixes I uses for various things in the Central Westerlands. Might be useful to someone.
Grass mix (to be used in conjunction with patches of flowers on grassy hills and plains)...
The fact that a black ram is enough to make her dragon full (to me) implies that it isn't fully grown, possibly the size of a large elephant. So as long as the yard is large enough to hold about two large elephants, it should probably be fine.
Small update: I'm adding a new mini project along the River Road: /warp sfinn! It's an inn complex about 2-days' journey from Lannisport and 1 day away from Oxcross. It's nestled in the hills at the base of a valley, and it'd be cool if you can use the terrain to your advantage in some way.

After taking some time to look over the project, I've noted a few things to fix before I can post-approve:
There's a pillar of yellow wool about halfway between /warp norrey and /warp norreyhf2
/warp norreyham3 might need to be moved. It's currently in the air above...
Overall great project, Ric! I just took a look at (hopefully) everything and left some melons in various places. Another thing to note, some of the slabbing in general could be smoother on the roads. Once these things are taken care of, I'll post-approve!
I feel like border markers in-game could be added later, but I don't really see a point in doing it right now, especially before these projects even have applications in the works. I just want the future project leaders to have an idea of how the space should be distributed.
